The traditional Jewish Kapparot ceremony that is described in Shulchan Aruch and found in Jewish prayer books should not be practiced by Non-Jews, because it is not relevant for them. A Non-Jew can give proper charity at any time, including before Rosh Hashanah or Yom Kippur.

If a Non-Jew gives charity to a Rabbi or a Jewish charitable organization (including if they are collecting Kapparot donations), it is best if the donor includes the information that it's being donated by a Non-Jew, and that the charity money should be directed for the physical needs of poor people.
